Hawaiian Pink snapper is another name for this tropical Pacific snapper species, which fetches top dollar at the Honolulu fish auction compared to other bottomfish. Opakapaka has light pink flesh with an almost translucent appearance and a mild, sweet, and ocean-fresh flavor. Fish caught during the winter months have a higher fat content than those caught during summer, and we recommend buying it buying it from October through February. We source it out of Hawaii where it is caught with vertical hook-and-line gear, which results in minimal impact to the marine ecosystem. There is very little bycatch and no seabed disturbance associated with the harvesting of this species.
