The Hawaiian Red Snapper, also known as Onaga, has light pink flesh and is semi-firm, lean, flaky, and moist. The texture is well-balanced and is exquisite in a ceviche preparation; it also holds up well on the grill. Scarlet and Ruby snapper are its other common names, but it is not the same species as Pink snapper, a.k.a. opakapaka. The main difference between the two is in the texture of the meat and the Long-tail Red snapper is slightly more tender or less firm than the opakapaka. It is caught at depths of 500-900 feet with vertical hook-and-line gear. Monterey Bay Aquarium rates the Hawaiian Red Snapper as a “Good Alternative”.
